1. Add 2 Tbsp. olive oil to a large skillet until hot.
2. Rub the Beef with Salt and Pepper and brown the beef on all sides to seal in the juices.
3. While the beef browns, slice the onions and chunk the potatoes.
4. Add 1/3 of the onions to the bottom of the crockpot and season with salt and pepper.
5. Lay the Beef on top of the onions in the slow cooker.
6. Drop the Potatoes and Carrots around the roast.
7. Season the pot with all of the seasonings and salsa.
8. Pour the Beef Stock over the vegetables and cover the crockpot.
9. Cook on low for 10 hours or until the beef is tender.
10. Serve the beef in slices with the vegetables as a side and enjoy!
